Eton Mess
A delightful British dessert combining fluffy meringue, fresh strawberries, and whipped cream in a beautiful, deliberately messy creation.

Ingredients
- •300g fresh strawberries
- •2 tablespoons caster sugar
- •300ml heavy cream
- •2 tablespoons icing sugar
- •1 teaspoon vanilla extract
- •100g meringue pieces or crushed meringue nests
- •1 tablespoon strawberry jam
Directions
- 1Hull and halve the fresh strawberries, then toss with caster sugar and let sit for 5 minutes to release their juices.
- 2In a large bowl, whip the heavy cream with icing sugar and vanilla extract until soft peaks form.
- 3Gently fold the meringue pieces into the whipped cream, leaving some chunks for texture.
- 4Layer the cream mixture with strawberries and their juices in serving glasses or bowls.
- 5Drizzle with strawberry jam and top with any remaining meringue pieces.
- 6Serve immediately while the meringue is still crisp.
