Ingredients

  • 300g fresh strawberries
  • 2 tablespoons caster sugar
  • 300ml heavy cream
  • 2 tablespoons icing sugar
  • 1 teaspoon vanilla extract
  • 100g meringue pieces or crushed meringue nests
  • 1 tablespoon strawberry jam

Directions

  1. 1Hull and halve the fresh strawberries, then toss with caster sugar and let sit for 5 minutes to release their juices.
  2. 2In a large bowl, whip the heavy cream with icing sugar and vanilla extract until soft peaks form.
  3. 3Gently fold the meringue pieces into the whipped cream, leaving some chunks for texture.
  4. 4Layer the cream mixture with strawberries and their juices in serving glasses or bowls.
  5. 5Drizzle with strawberry jam and top with any remaining meringue pieces.
  6. 6Serve immediately while the meringue is still crisp.
