Falafel

Crispy golden chickpea fritters with warm spices and fresh herbs, perfect for a satisfying vegetarian meal.

Ingredients

  • 2 cups dried chickpeas (soaked overnight)
  • 1 cup fresh parsley, chopped
  • 1/2 cup fresh cilantro, chopped
  • 4 cloves garlic, minced
  • 1 small onion, chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • Oil for frying

Directions

  1. 1Drain soaked chickpeas and pat dry with paper towels.
  2. 2Pulse chickpeas, parsley, cilantro, garlic, onion, cumin, cayenne, and salt in a food processor until coarsely combined.
  3. 3Add flour and pulse until mixture holds together but remains slightly crumbly.
  4. 4Form mixture into 16-20 small balls and gently flatten into patties.
  5. 5Heat 2 inches of oil in a deep skillet to 350°F.
  6. 6Fry falafel in batches for 2-3 minutes per side until deep golden brown.
  7. 7Drain on paper towels and serve warm with tahini sauce and pita bread.
