Ingredients
- •2 cups dried chickpeas (soaked overnight)
- •1 cup fresh parsley, chopped
- •1/2 cup fresh cilantro, chopped
- •4 cloves garlic, minced
- •1 small onion, chopped
- •1 teaspoon ground cumin
- •1/2 teaspoon cayenne pepper
- •1/2 cup all-purpose flour
- •1 teaspoon salt
- •Oil for frying
Directions
- 1Drain soaked chickpeas and pat dry with paper towels.
- 2Pulse chickpeas, parsley, cilantro, garlic, onion, cumin, cayenne, and salt in a food processor until coarsely combined.
- 3Add flour and pulse until mixture holds together but remains slightly crumbly.
- 4Form mixture into 16-20 small balls and gently flatten into patties.
- 5Heat 2 inches of oil in a deep skillet to 350°F.
- 6Fry falafel in batches for 2-3 minutes per side until deep golden brown.
- 7Drain on paper towels and serve warm with tahini sauce and pita bread.
