Falafel Plate

Crispy golden chickpea fritters served with fresh vegetables, hummus, and tahini sauce for an authentic Middle Eastern meal.

Ingredients

  • 2 cups dried chickpeas (soaked overnight)
  • 1 cup fresh parsley
  • 1/2 cup fresh cilantro
  • 4 green onions, chopped
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 2 cloves garlic, minced
  • oil for frying vegetable oil
  • 1 cup tahini sauce or hummus

Directions

  1. 1Drain soaked chickpeas and pat dry with paper towels.
  2. 2Pulse chickpeas, parsley, cilantro, green onions, garlic, flour, cumin, coriander, cayenne, and salt in a food processor until mixture resembles coarse breadcrumbs.
  3. 3Form mixture into 16-20 small balls or patties and refrigerate for 15 minutes.
  4. 4Heat 2 inches of oil in a deep pot to 350°F (175°C).
  5. 5Fry falafel in batches for 2-3 minutes per side until golden brown, then drain on paper towels.
  6. 6Serve hot falafel on a platter with fresh tomatoes, cucumbers, lettuce, and onions.
  7. 7Drizzle with tahini sauce or hummus and serve with warm pita bread.
