Falafel Plate
Crispy golden chickpea fritters served with fresh vegetables, hummus, and tahini sauce for an authentic Middle Eastern meal.

Ingredients
- •2 cups dried chickpeas (soaked overnight)
- •1 cup fresh parsley
- •1/2 cup fresh cilantro
- •4 green onions, chopped
- •1/4 cup all-purpose flour
- •1 teaspoon ground cumin
- •1 teaspoon ground coriander
- •1/2 teaspoon cayenne pepper
- •1 teaspoon salt
- •2 cloves garlic, minced
- •oil for frying vegetable oil
- •1 cup tahini sauce or hummus
Directions
- 1Drain soaked chickpeas and pat dry with paper towels.
- 2Pulse chickpeas, parsley, cilantro, green onions, garlic, flour, cumin, coriander, cayenne, and salt in a food processor until mixture resembles coarse breadcrumbs.
- 3Form mixture into 16-20 small balls or patties and refrigerate for 15 minutes.
- 4Heat 2 inches of oil in a deep pot to 350°F (175°C).
- 5Fry falafel in batches for 2-3 minutes per side until golden brown, then drain on paper towels.
- 6Serve hot falafel on a platter with fresh tomatoes, cucumbers, lettuce, and onions.
- 7Drizzle with tahini sauce or hummus and serve with warm pita bread.
