Falafel Wrap

Crispy golden falafel tucked into warm pita with fresh vegetables and creamy tahini sauce.

Ingredients

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 cup fresh parsley, chopped
  • 1/2 cup onion, chopped
  • 3 cloves garlic, minced
  • 1/3 cup flour
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 2 cups vegetable oil for frying
  • 4 pita breads
  • 1/2 cup tahini sauce
  • 2 cups mixed fresh vegetables (tomatoes, cucumbers, lettuce)

Directions

  1. 1Combine chickpeas, parsley, onion, garlic, flour, cumin, salt, and cayenne in a food processor until mixture resembles coarse breadcrumbs.
  2. 2Form mixture into 12-16 balls and flatten slightly into patties.
  3. 3Heat oil in a deep pan to 350°F and fry falafel 2-3 minutes per side until golden brown, then drain on paper towels.
  4. 4Warm pita breads in a dry skillet for 30 seconds per side.
  5. 5Spread tahini sauce inside each pita, then fill with falafel, tomatoes, cucumbers, and lettuce.
  6. 6Wrap in foil and serve immediately.
