Falafel Wrap
Crispy golden falafel tucked into warm pita with fresh vegetables and creamy tahini sauce.

Ingredients
- •2 cans (15 oz each) chickpeas, drained and rinsed
- •1 cup fresh parsley, chopped
- •1/2 cup onion, chopped
- •3 cloves garlic, minced
- •1/3 cup flour
- •1 teaspoon ground cumin
- •1/2 teaspoon salt
- •1/4 teaspoon cayenne pepper
- •2 cups vegetable oil for frying
- •4 pita breads
- •1/2 cup tahini sauce
- •2 cups mixed fresh vegetables (tomatoes, cucumbers, lettuce)
Directions
- 1Combine chickpeas, parsley, onion, garlic, flour, cumin, salt, and cayenne in a food processor until mixture resembles coarse breadcrumbs.
- 2Form mixture into 12-16 balls and flatten slightly into patties.
- 3Heat oil in a deep pan to 350°F and fry falafel 2-3 minutes per side until golden brown, then drain on paper towels.
- 4Warm pita breads in a dry skillet for 30 seconds per side.
- 5Spread tahini sauce inside each pita, then fill with falafel, tomatoes, cucumbers, and lettuce.
- 6Wrap in foil and serve immediately.
