Ingredients

  • 2 cups glutinous rice
  • 2 1/4 cups water
  • 1 youtiao, cut into 4 pieces
  • 1 cup pork floss
  • 3/4 cup pickled mustard greens, chopped
  • 3 tbsp scallion oil
  • 1 tbsp sesame seeds

Directions

  1. 1Rinse the glutinous rice and cook it with water until tender and sticky, about 25 minutes.
  2. 2Spread a sheet of plastic wrap on the counter and press one quarter of the warm rice into a rectangle.
  3. 3Brush the rice lightly with scallion oil and sprinkle with sesame seeds.
  4. 4Arrange youtiao, pork floss, and pickled mustard greens in a line across the centre.
  5. 5Use the plastic wrap to roll the rice tightly around the filling, pressing gently to seal.
  6. 6Unwrap, cut in half if desired, and serve warm while the youtiao remains crisp.

💡 Keep the youtiao as dry and crisp as possible; its crunch is the contrast that distinguishes fan tuan from a plain sticky-rice roll.
