Ingredients

  • 2 cups cassava flour, coarse
  • 1 medium yellow onion, finely diced
  • 3 tbsp vegetable oil
  • 3/4 tsp salt
  • 1/4 cup fresh parsley, chopped

Directions

  1. 1Heat vegetable oil in a wide skillet over medium heat.
  2. 2Add the onion and cook 5 minutes until soft and lightly golden.
  3. 3Stir in cassava flour and spread it evenly across the skillet.
  4. 4Toast for 6–8 minutes, stirring often, until the flour smells nutty and turns lightly golden.
  5. 5Season with salt and remove the skillet from the heat.
  6. 6Fold in parsley and serve warm or at room temperature.
