Fasolia (Ethiopian Green Beans and Carrots)
Green beans and carrots stewed gently with onion and garlic until soft and sweet, the everyday Ethiopian fasting side.

Ingredients
- •400 g green beans, trimmed
- •2 carrots, sliced
- •1 small onion, chopped
- •2 garlic cloves, minced
- •2 tbsp neutral oil
Directions
- 1Cook the onion in the oil over medium-low heat for eight minutes until soft and golden.
- 2Add the garlic and stir for one minute.
- 3Add the carrots with a splash of water, cover, and cook five minutes.
- 4Add the green beans and season with salt.
- 5Cover and cook a further ten minutes, stirring once, until both vegetables are fully tender.
- 6Uncover and cook off any liquid left in the pan before serving.
💡 This is not a crisp-tender dish. Ethiopian fasolia is meant to be soft through, so let it go past where you would normally stop.
