Fasolia (Ethiopian Green Beans and Carrots)

Green beans and carrots stewed gently with onion and garlic until soft and sweet, the everyday Ethiopian fasting side.

Ingredients

  • 400 g green beans, trimmed
  • 2 carrots, sliced
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp neutral oil

Directions

  1. 1Cook the onion in the oil over medium-low heat for eight minutes until soft and golden.
  2. 2Add the garlic and stir for one minute.
  3. 3Add the carrots with a splash of water, cover, and cook five minutes.
  4. 4Add the green beans and season with salt.
  5. 5Cover and cook a further ten minutes, stirring once, until both vegetables are fully tender.
  6. 6Uncover and cook off any liquid left in the pan before serving.

💡 This is not a crisp-tender dish. Ethiopian fasolia is meant to be soft through, so let it go past where you would normally stop.
