Ingredients
- •2 cups mixed greens (lettuce, arugula, or spinach)
- •2 large tomatoes, diced
- •1 cucumber, diced
- •1 bunch radishes, thinly sliced
- •½ cup fresh parsley, chopped
- •¼ cup fresh mint, chopped
- •2 pita breads, toasted and broken into chips
- •3 tablespoons olive oil
- •2 tablespoons lemon juice
- •1 tablespoon sumac
- •2 cloves garlic, minced
- •to taste Salt and pepper
Directions
- 1Toast pita bread in a 400°F oven for 5 minutes until crispy, then break into bite-sized pieces.
- 2Combine all fresh vegetables, herbs, and greens in a large bowl.
- 3Whisk together olive oil, lemon juice, sumac, minced garlic, salt, and pepper in a small bowl.
- 4Pour dressing over the salad and toss gently to combine.
- 5Add the warm pita chips just before serving and toss again to distribute evenly.
- 6Serve immediately while pita chips are still crispy.
