Feijoada

A rich and hearty Brazilian black bean stew with pork that's deeply flavorful and perfect for feeding a crowd.

Ingredients

  • 1 pound dried black beans
  • 1 pound pork shoulder, cubed
  • 6 ounces smoked sausage, sliced
  • 4 ounces bacon, chopped
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 bay leaves bay leaves
  • 8 cups beef broth
  • 1 tablespoon olive oil
  • to taste salt and black pepper

Directions

  1. 1Soak black beans in water overnight, then drain.
  2. 2Heat olive oil in a large pot and cook bacon until crispy; remove and set aside.
  3. 3Brown pork shoulder in the same pot, then add onion and garlic and cook until softened.
  4. 4Add drained beans, smoked sausage, bacon, bay leaves, and beef broth to the pot.
  5. 5Bring to a boil, then reduce heat and simmer covered for 2-2.5 hours until beans are very tender.
  6. 6Season with salt and pepper to taste, then serve hot with rice and orange slices on the side.
