Feijoada
A rich and hearty Brazilian black bean stew with pork that's deeply flavorful and perfect for feeding a crowd.

Ingredients
- •1 pound dried black beans
- •1 pound pork shoulder, cubed
- •6 ounces smoked sausage, sliced
- •4 ounces bacon, chopped
- •1 large onion, diced
- •4 cloves garlic, minced
- •2 bay leaves bay leaves
- •8 cups beef broth
- •1 tablespoon olive oil
- •to taste salt and black pepper
Directions
- 1Soak black beans in water overnight, then drain.
- 2Heat olive oil in a large pot and cook bacon until crispy; remove and set aside.
- 3Brown pork shoulder in the same pot, then add onion and garlic and cook until softened.
- 4Add drained beans, smoked sausage, bacon, bay leaves, and beef broth to the pot.
- 5Bring to a boil, then reduce heat and simmer covered for 2-2.5 hours until beans are very tender.
- 6Season with salt and pepper to taste, then serve hot with rice and orange slices on the side.
