Fig Bars

Ingredients
- •1 cup dried figs, chopped
- •3/4 cup water
- •2 tablespoons sugar
- •1/2 cup butter, softened
- •1 cup all-purpose flour
- •3/4 cup old-fashioned oats
- •1/2 cup brown sugar
- •1/4 teaspoon salt
- •1/2 teaspoon vanilla extract
Directions
- 1Preheat oven to 350°F and grease an 8x8 inch baking pan.
- 2In a saucepan, combine chopped figs, water, and sugar; simmer for 10 minutes until figs are soft and mixture thickens, then cool slightly.
- 3In a bowl, mix butter, brown sugar, and vanilla until creamy; stir in flour, oats, and salt until crumbly.
- 4Press half the oat mixture into the prepared pan, spread fig filling evenly over top, and sprinkle remaining oat mixture over figs.
- 5Bake for 20-25 minutes until golden brown, then cool completely before cutting into 16 bars.
