Ingredients

  • 1 cup dried figs, chopped
  • 3/4 cup water
  • 2 tablespoons sugar
  • 1/2 cup butter, softened
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned oats
  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Directions

  1. 1Preheat oven to 350°F and grease an 8x8 inch baking pan.
  2. 2In a saucepan, combine chopped figs, water, and sugar; simmer for 10 minutes until figs are soft and mixture thickens, then cool slightly.
  3. 3In a bowl, mix butter, brown sugar, and vanilla until creamy; stir in flour, oats, and salt until crumbly.
  4. 4Press half the oat mixture into the prepared pan, spread fig filling evenly over top, and sprinkle remaining oat mixture over figs.
  5. 5Bake for 20-25 minutes until golden brown, then cool completely before cutting into 16 bars.
