Filipino Pork Giniling

Filipino ground pork sautéed with tomato, potato, carrot, peas, and raisins in a savoury-sweet sauce made for rice and reheatable meal prep.

Ingredients

  • 1 1/2 lb ground pork
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 medium tomatoes, diced
  • 1 cup tomato sauce
  • 1 large potato, peeled and diced
  • 1 large carrot, diced
  • 1 cup frozen peas
  • 1/3 cup raisins
  • 2 tbsp soy sauce
  • 2 tbsp vegetable oil
  • 1/2 tsp black pepper

Directions

  1. 1Heat oil in a wide skillet and cook onion and garlic for 3 minutes until fragrant.
  2. 2Add ground pork and cook 6–7 minutes, breaking it into small crumbles.
  3. 3Stir in tomatoes, tomato sauce, soy sauce, and black pepper.
  4. 4Add potato and carrot, cover, and simmer 10 minutes until nearly tender.
  5. 5Stir in peas and raisins and cook uncovered 4–5 minutes until the vegetables are tender and the sauce thickens.
  6. 6Cool slightly before portioning with rice for meal-prep lunches.

💡 Keep the vegetables diced small so they finish at the same time and each spoonful has pork, potato, and carrot together.
