Filipino Pork Giniling
Filipino ground pork sautéed with tomato, potato, carrot, peas, and raisins in a savoury-sweet sauce made for rice and reheatable meal prep.

Ingredients
- •1 1/2 lb ground pork
- •1 medium yellow onion, diced
- •4 cloves garlic, minced
- •2 medium tomatoes, diced
- •1 cup tomato sauce
- •1 large potato, peeled and diced
- •1 large carrot, diced
- •1 cup frozen peas
- •1/3 cup raisins
- •2 tbsp soy sauce
- •2 tbsp vegetable oil
- •1/2 tsp black pepper
Directions
- 1Heat oil in a wide skillet and cook onion and garlic for 3 minutes until fragrant.
- 2Add ground pork and cook 6–7 minutes, breaking it into small crumbles.
- 3Stir in tomatoes, tomato sauce, soy sauce, and black pepper.
- 4Add potato and carrot, cover, and simmer 10 minutes until nearly tender.
- 5Stir in peas and raisins and cook uncovered 4–5 minutes until the vegetables are tender and the sauce thickens.
- 6Cool slightly before portioning with rice for meal-prep lunches.
💡 Keep the vegetables diced small so they finish at the same time and each spoonful has pork, potato, and carrot together.
