Ingredients

  • 2 lb carrots, peeled and sliced
  • 2 cups cooked white rice
  • 2 cups whole milk
  • 2 eggs
  • 3 tbsp unsalted butter, melted
  • 1 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/2 cup breadcrumbs

Directions

  1. 1Heat the oven to 375°F (190°C).
  2. 2Boil the carrots for 15 minutes until very tender, then drain and mash.
  3. 3Mix carrots with rice, milk, eggs, butter, salt, and nutmeg.
  4. 4Spread the mixture in a greased baking dish.
  5. 5Sprinkle breadcrumbs evenly over the top.
  6. 6Bake for 40 minutes until set and lightly browned.
