Ingredients
- •2 lb carrots, peeled and sliced
- •2 cups cooked white rice
- •2 cups whole milk
- •2 eggs
- •3 tbsp unsalted butter, melted
- •1 tsp salt
- •1/4 tsp ground nutmeg
- •1/2 cup breadcrumbs
Directions
- 1Heat the oven to 375°F (190°C).
- 2Boil the carrots for 15 minutes until very tender, then drain and mash.
- 3Mix carrots with rice, milk, eggs, butter, salt, and nutmeg.
- 4Spread the mixture in a greased baking dish.
- 5Sprinkle breadcrumbs evenly over the top.
