Firfir (Ethiopian Injera Breakfast)
Ethiopian breakfast of torn injera tossed in a spicy berbere tomato sauce enriched with niter kibbeh.

Ingredients
- •4 large rounds injera, torn into bite-size pieces
- •1 medium yellow onion, finely diced
- •2 tomatoes, diced
- •2 tbsp berbere spice blend
- •3 tbsp niter kibbeh
- •1 cup water
- •1/2 tsp salt
Directions
- 1Melt the niter kibbeh in a wide skillet and cook the onion for 5 minutes.
- 2Add tomatoes and berbere and cook for 3 minutes.
- 3Pour in water and salt and simmer for 2 minutes.
- 4Add the torn injera and toss gently until every piece is coated.
- 5Cook for 2 minutes more until the injera softens but is not mushy.
- 6Serve hot straight from the skillet.
💡 Add the injera only after the sauce is fully seasoned; too much stirring turns firfir pasty.
