Fish and Chips

Crispy beer-battered fish fillets served with golden fried potatoes and tartar sauce.

Ingredients

  • 2 lbs cod or haddock fillets
  • 1.5 cups all-purpose flour
  • 1 cup beer or sparkling water
  • 1 tsp baking powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 lbs russet potatoes
  • 2 quarts vegetable oil for frying
  • 1 cup tartar sauce
  • 1 lemon, cut into wedges

Directions

  1. 1Cut potatoes into 1/4-inch thick fries, soak in cold water for 30 minutes, then pat dry.
  2. 2Heat oil to 325°F in a large pot. Fry potatoes in batches for 5-6 minutes until pale and tender, then drain on paper towels.
  3. 3Mix 1 cup flour, baking powder, salt, and pepper in a bowl. Whisk in beer until smooth to create batter.
  4. 4Pat fish dry and coat lightly with remaining 1/2 cup flour, then dip into batter.
  5. 5Increase oil temperature to 375°F. Fry fish 4-5 minutes per side until golden brown, drain on paper towels.
  6. 6Fry potatoes again at 375°F for 2-3 minutes until golden and crispy, season with salt.
  7. 7Serve fish and chips hot with tartar sauce and lemon wedges.
