Ingredients

  • 1 cup all-purpose flour
  • 1 cup beer or sparkling water
  • 1 teaspoon baking powder
  • 1 pound cod or halibut fillets
  • 2 large potatoes
  • 4 slices white bread
  • 1/2 cup tartar sauce
  • 2 tablespoons malt vinegar
  • to taste salt and pepper
  • 2 cups vegetable oil for frying

Directions

  1. 1Cut potatoes into thick fries, soak in cold water for 15 minutes, then pat dry and fry in oil at 325°F for 5 minutes; drain and set aside.
  2. 2Mix flour, baking powder, salt, and pepper; whisk in beer until smooth to create batter.
  3. 3Heat oil to 375°F and dip fish fillets in batter, then fry for 4-5 minutes until golden and crispy; drain on paper towels.
  4. 4Increase oil temperature to 375°F and fry reserved potatoes for 2-3 minutes until golden and crispy; season with salt.
  5. 5Spread tartar sauce on bread slices and layer with battered fish, then top with chips and vinegar.
  6. 6Serve immediately while fish and chips are hot and crispy.
