Fish Curry
A fragrant and creamy South Indian curry with tender fish in a rich coconut and tomato sauce infused with aromatic spices.

Ingredients
- •1.5 lbs white fish fillets (cod or tilapia)
- •2 tbsp coconut oil
- •1 medium onion, sliced
- •3 cloves garlic, minced
- •1 tbsp ginger, minced
- •2 tomatoes, chopped
- •1 can (13.5 oz) coconut milk
- •1.5 tbsp curry powder
- •1 tsp turmeric powder
- •1 tsp red chili powder
- •1 tsp salt
- •2 tbsp fresh cilantro, chopped
Directions
- 1Heat coconut oil in a large pan over medium heat and sauté onions until golden brown, about 5 minutes.
- 2Add garlic and ginger, cooking for 1 minute until fragrant.
- 3Stir in curry powder, turmeric, and chili powder, cooking for 30 seconds.
- 4Add chopped tomatoes and cook for 3-4 minutes until softened.
- 5Pour in coconut milk and bring to a simmer, stirring well.
- 6Gently add fish fillets and salt, simmering for 8-10 minutes until fish is cooked through and flakes easily.
- 7Top with fresh cilantro and serve hot with rice or naan bread.
