Fish Suya

Spiced grilled fish skewers with a crispy, aromatic peanut coating and smoky char.

Ingredients

  • 2 lbs firm white fish fillets (cod or mackerel), cut into 2-inch cubes
  • 1 cup roasted peanuts, ground
  • 3 tbsp paprika
  • 2 tbsp cayenne pepper
  • 2 tsp garlic powder
  • 2 tsp ginger powder
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 tbsp vegetable oil
  • 2 tbsp butter, melted
  • 2 limes, cut into wedges

Directions

  1. 1Thread fish cubes onto metal skewers, leaving small gaps between pieces.
  2. 2In a shallow bowl, combine ground peanuts, paprika, cayenne, garlic powder, ginger powder, cumin, salt, and black pepper.
  3. 3Brush fish skewers with oil, then roll in the peanut spice mixture, coating all sides thoroughly.
  4. 4Heat a grill or grill pan over medium-high heat for 5 minutes until very hot.
  5. 5Grill fish skewers for 3-4 minutes per side until fish is cooked through and coating is charred and crispy.
  6. 6Transfer to a platter and brush lightly with melted butter.
  7. 7Serve hot with lime wedges for squeezing over the fish.
