Fish Suya
Spiced grilled fish skewers with a crispy, aromatic peanut coating and smoky char.

Ingredients
- •2 lbs firm white fish fillets (cod or mackerel), cut into 2-inch cubes
- •1 cup roasted peanuts, ground
- •3 tbsp paprika
- •2 tbsp cayenne pepper
- •2 tsp garlic powder
- •2 tsp ginger powder
- •1 tsp ground cumin
- •1 tsp salt
- •1/2 tsp black pepper
- •3 tbsp vegetable oil
- •2 tbsp butter, melted
- •2 limes, cut into wedges
Directions
- 1Thread fish cubes onto metal skewers, leaving small gaps between pieces.
- 2In a shallow bowl, combine ground peanuts, paprika, cayenne, garlic powder, ginger powder, cumin, salt, and black pepper.
- 3Brush fish skewers with oil, then roll in the peanut spice mixture, coating all sides thoroughly.
- 4Heat a grill or grill pan over medium-high heat for 5 minutes until very hot.
- 5Grill fish skewers for 3-4 minutes per side until fish is cooked through and coating is charred and crispy.
- 6Transfer to a platter and brush lightly with melted butter.
- 7Serve hot with lime wedges for squeezing over the fish.
