Focaccia Vegetable Sandwich
A delicious Italian-inspired sandwich loaded with fresh vegetables, creamy spreads, and melted cheese on crispy focaccia bread.

Ingredients
- •1 focaccia bread loaf
- •1/2 cup hummus or pesto
- •2 cups fresh spinach or arugula
- •1 large tomato, sliced
- •1 cucumber, sliced
- •1 red bell pepper, sliced
- •1 cup roasted red peppers from a jar
- •8 oz fresh mozzarella or provolone cheese, sliced
- •1/4 cup red onion, thinly sliced
- •2 tablespoons balsamic vinegar
- •2 tablespoons olive oil
- •to taste salt and black pepper
Directions
- 1Slice the focaccia bread horizontally to create two halves.
- 2Spread hummus or pesto evenly on both cut sides of the bread.
- 3Layer the spinach, tomato slices, cucumber, fresh bell pepper, roasted red peppers, and cheese on the bottom half.
- 4Top with red onion slices and drizzle with balsamic vinegar and olive oil.
- 5Season with salt and pepper to taste.
- 6Place the top half of focaccia over the filling and press gently.
- 7Cut into quarters and serve immediately, or wrap in foil for later.
