Focaccia Vegetable Sandwich

A delicious Italian-inspired sandwich loaded with fresh vegetables, creamy spreads, and melted cheese on crispy focaccia bread.

Ingredients

  • 1 focaccia bread loaf
  • 1/2 cup hummus or pesto
  • 2 cups fresh spinach or arugula
  • 1 large tomato, sliced
  • 1 cucumber, sliced
  • 1 red bell pepper, sliced
  • 1 cup roasted red peppers from a jar
  • 8 oz fresh mozzarella or provolone cheese, sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • to taste salt and black pepper

Directions

  1. 1Slice the focaccia bread horizontally to create two halves.
  2. 2Spread hummus or pesto evenly on both cut sides of the bread.
  3. 3Layer the spinach, tomato slices, cucumber, fresh bell pepper, roasted red peppers, and cheese on the bottom half.
  4. 4Top with red onion slices and drizzle with balsamic vinegar and olive oil.
  5. 5Season with salt and pepper to taste.
  6. 6Place the top half of focaccia over the filling and press gently.
  7. 7Cut into quarters and serve immediately, or wrap in foil for later.
