Ingredients

  • 2 cups fonio grain
  • 1.5 lbs chicken breast, cubed
  • 3 tablespoons jerk seasoning
  • 2 cans black beans, drained and rinsed
  • 1 red bell pepper diced
  • 1/2 cup fresh cilantro, chopped
  • 2 limes, juiced
  • 1/4 cup olive oil
  • 1 teaspoon garlic, minced

Directions

  1. 1Cook fonio according to package directions, typically 15-20 minutes, then fluff with a fork.
  2. 2Toss chicken cubes with jerk seasoning, salt, and pepper, then cook in a skillet over medium-high heat for 8-10 minutes until golden and cooked through.
  3. 3Warm black beans in a separate pot with a pinch of cumin and salt for 5 minutes.
  4. 4Whisk together lime juice, cilantro, olive oil, minced garlic, salt, and pepper to make the dressing.
  5. 5Divide cooked fonio among four bowls and top with jerk chicken, black beans, and diced bell pepper.
  6. 6Drizzle lime cilantro dressing over each bowl and serve immediately.
