Ingredients

  • 2 cups fonio grain
  • 1.5 lbs pork shoulder, cubed
  • 3 tablespoons jerk seasoning
  • 2 medium plantains, peeled and sliced
  • 3 tablespoons olive oil
  • 1 cup fresh cilantro, chopped
  • 3 limes, juiced
  • 2 cloves garlic, minced
  • 1/4 cup water
  • 1 teaspoon salt

Directions

  1. 1Cook fonio according to package directions, typically 15-20 minutes, then set aside.
  2. 2Toss pork cubes with jerk seasoning and let marinate for 10 minutes while oven preheats to 425°F.
  3. 3Toss plantain slices with 1 tablespoon olive oil, salt, and pepper, then roast for 20-25 minutes until caramelized.
  4. 4Heat 2 tablespoons olive oil in a skillet over medium-high heat and cook marinated pork for 12-15 minutes until cooked through.
