Freekeh Pilaf with Toasted Almonds

Ingredients
- •1 1/2 cups freekeh
- •1 medium yellow onion, diced
- •2 tbsp olive oil
- •3 cups vegetable broth
- •1/2 cup sliced almonds
- •1/3 cup fresh parsley, chopped
- •2 tbsp fresh lemon juice
- •1 tsp salt
- •1/4 tsp black pepper
Directions
- 1Rinse the freekeh and drain it thoroughly.
- 2Heat olive oil in a saucepan and cook onion for 5 minutes until softened.
- 3Add freekeh, vegetable broth, salt, and black pepper and bring to a boil.
- 4Cover, reduce heat, and simmer for 20 minutes until the grains are tender.
- 5Toast the almonds in a dry skillet for 3 minutes until fragrant and golden.
- 6Fluff the freekeh and fold in almonds, parsley, and lemon juice.
