Ingredients

  • 1 1/2 cups freekeh
  • 1 medium yellow onion, diced
  • 2 tbsp olive oil
  • 3 cups vegetable broth
  • 1/2 cup sliced almonds
  • 1/3 cup fresh parsley, chopped
  • 2 tbsp fresh lemon juice
  • 1 tsp salt
  • 1/4 tsp black pepper

Directions

  1. 1Rinse the freekeh and drain it thoroughly.
  2. 2Heat olive oil in a saucepan and cook onion for 5 minutes until softened.
  3. 3Add freekeh, vegetable broth, salt, and black pepper and bring to a boil.
  4. 4Cover, reduce heat, and simmer for 20 minutes until the grains are tender.
  5. 5Toast the almonds in a dry skillet for 3 minutes until fragrant and golden.
  6. 6Fluff the freekeh and fold in almonds, parsley, and lemon juice.

💡 Rest the cooked freekeh covered for 5 minutes before fluffing; the grains finish absorbing broth without becoming mushy.
