French Lentil and Goat Cheese Lunch Box
Make-ahead French lentils with goat cheese, roasted carrots, parsley, and mustard vinaigrette for a satisfying packed lunch.

Ingredients
- •1 1/2 cups green lentils, rinsed
- •4 carrots, sliced
- •6 oz goat cheese, crumbled
- •1/2 cup fresh parsley, chopped
- •1 tbsp Dijon mustard
- •3 tbsp red wine vinegar
- •1/4 cup olive oil
- •1 tsp salt
Directions
- 1Heat the oven to 425°F (220°C) and roast carrots with 1 tablespoon olive oil for 20 minutes.
- 2Simmer lentils for 20–22 minutes until tender, then drain well.
- 3Whisk mustard, vinegar, remaining olive oil, and salt.
- 4Toss warm lentils with the vinaigrette.
- 5Divide lentils and roasted carrots among lunch containers.
- 6Top with goat cheese and parsley and chill.
