Ingredients
- •4 fillets Atlantic Salmon Fillet
- •1 cup quinoa
- •2 cups water
- •1 tbsp cooking oil
- •1 lemon
- •1 tsp salt
- •1 tsp pepper
Directions
- 1Rinse quinoa and cook in 2 cups water with a pinch of salt for 15 minutes.
- 2Pat salmon fillets dry and season generously with salt, pepper, and the lemon zest.
- 3Heat cooking oil in a skillet over medium-high heat until shimmering.
- 4Cook salmon skin-side down for 4 minutes, then flip and cook 3 more minutes.
- 5Fluff quinoa with a fork and divide among four plates.
- 6Place a salmon fillet on each plate, squeeze the lemon over, and serve immediately.
💡 Quinoa should be fully drained and fluffed before salmon is added; trapped cooking water makes the bowl taste washed out.
