Fried Catfish

Ingredients
- •2 pounds catfish fillets
- •1 cup cornmeal
- •1/2 cup all-purpose flour
- •2 teaspoons salt
- •1 teaspoon black pepper
- •1 teaspoon cayenne pepper
- •1 teaspoon garlic powder
- •2 eggs
- •1/4 cup buttermilk
- •3 cups vegetable oil
Directions
- 1Mix cornmeal, flour, salt, black pepper, cayenne pepper, and garlic powder in a shallow bowl.
- 2Whisk together eggs and buttermilk in another shallow bowl.
- 3Pat catfish fillets dry with paper towels.
- 4Dip each fillet into the egg mixture, then coat thoroughly with the cornmeal mixture.
- 5Heat vegetable oil in a large cast-iron skillet over medium-high heat until shimmering.
- 6Carefully place coated fillets into hot oil and fry for 3-4 minutes per side until golden brown and crispy.
- 7Remove fillets with a slotted spoon and drain on paper towels.
- 8Serve hot with lemon wedges and your choice of sides.
