Ingredients

  • 2 pounds catfish fillets
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 2 eggs
  • 1/4 cup buttermilk
  • 3 cups vegetable oil

Directions

  1. 1Mix cornmeal, flour, salt, black pepper, cayenne pepper, and garlic powder in a shallow bowl.
  2. 2Whisk together eggs and buttermilk in another shallow bowl.
  3. 3Pat catfish fillets dry with paper towels.
  4. 4Dip each fillet into the egg mixture, then coat thoroughly with the cornmeal mixture.
  5. 5Heat vegetable oil in a large cast-iron skillet over medium-high heat until shimmering.
  6. 6Carefully place coated fillets into hot oil and fry for 3-4 minutes per side until golden brown and crispy.
  7. 7Remove fillets with a slotted spoon and drain on paper towels.
  8. 8Serve hot with lemon wedges and your choice of sides.
