Fried Cheese Curds

Golden, crispy-fried cheese curds with a melted interior and satisfying squeak, perfect for dipping in ranch or marinara sauce.

Ingredients

  • 1 pound cheese curds (fresh mozzarella curds)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • quart vegetable oil for frying

Directions

  1. 1Freeze cheese curds for at least 2 hours or overnight until very cold.
  2. 2Set up three shallow bowls: one with flour mixed with salt and pepper, one with beaten eggs, and one with panko breadcrumbs mixed with garlic powder and paprika.
  3. 3Working quickly, coat each cheese curd in flour, then dip in egg, then roll in panko breadcrumbs; place on a plate and freeze for 15 minutes.
  4. 4Heat oil to 350°F in a deep pot or deep fryer.
  5. 5Fry cheese curds in batches for 30-45 seconds until golden brown, being careful not to overcrowd the pan.
  6. 6Remove with a slotted spoon and drain on paper towels for 1 minute before serving hot.
