Ingredients

  • 4 medium green plantains
  • 2 cups vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper

Directions

  1. 1Peel the plantains by slicing off the ends and cutting lengthwise grooves through the skin, then peel away the skin with your fingers.
  2. 2Cut the peeled plantains into 1/4-inch thick diagonal or round slices.
  3. 3Heat the vegetable oil in a deep skillet or frying pan over medium-high heat until shimmering.
  4. 4Working in batches, carefully place plantain slices into the hot oil and fry for 3-4 minutes per side until golden brown and crispy.
  5. 5Remove the fried plantains with a slotted spoon and drain on paper towels.
  6. 6While still warm, sprinkle the fried plantains with salt, black pepper, garlic powder, and cayenne pepper to taste.
  7. 7Serve hot as a main dish or side, optionally with a dipping sauce or alongside rice and beans.
