Ingredients
- •4 medium green plantains
- •2 cups vegetable oil
- •1 teaspoon salt
- •1/2 teaspoon black pepper
- •1/2 teaspoon garlic powder
- •1/4 teaspoon cayenne pepper
Directions
- 1Peel the plantains by slicing off the ends and cutting lengthwise grooves through the skin, then peel away the skin with your fingers.
- 2Cut the peeled plantains into 1/4-inch thick diagonal or round slices.
- 3Heat the vegetable oil in a deep skillet or frying pan over medium-high heat until shimmering.
- 4Working in batches, carefully place plantain slices into the hot oil and fry for 3-4 minutes per side until golden brown and crispy.
- 5Remove the fried plantains with a slotted spoon and drain on paper towels.
- 6While still warm, sprinkle the fried plantains with salt, black pepper, garlic powder, and cayenne pepper to taste.
- 7Serve hot as a main dish or side, optionally with a dipping sauce or alongside rice and beans.
