Ingredients

  • •8 large eggs
  • •1/4 cup whole milk
  • •1/2 cup grated Parmesan cheese
  • •2 tablespoons olive oil
  • •1 medium onion, diced
  • •2 cups diced zucchini
  • •1 cup diced tomatoes
  • •2 cloves garlic, minced
  • •1 teaspoon salt
  • •1/2 teaspoon black pepper

Directions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Heat olive oil in a 10-inch oven-safe skillet over medium heat and sauté onion, zucchini, and garlic for 5 minutes until softened.
  3. 3Whisk together eggs, milk, Parmesan, salt, and pepper in a bowl.
  4. 4Add diced tomatoes to the skillet and stir to combine with vegetables.
  5. 5Pour egg mixture evenly over the vegetables in the skillet.
  6. 6Cook on the stovetop for 2-3 minutes until edges begin to set, then transfer to the oven.
  7. 7Bake for 12-15 minutes until the center is set and the top is lightly golden.
  8. 8Slice and serve warm.

💡 Pull the frittata while the centre still has a slight wobble; residual heat will set the eggs without making them rubbery.
