Ingredients

  • 2 cups apple, Gala, cored and roughly chopped
  • 1/2 cup elderflower cordial
  • 2 tbsp lime juice, freshly squeezed
  • 1/4 cup mint leaves, fresh
  • 2 cups ice cubes
  • 1 cup prosecco or sparkling white grape juice, chilled
  • 1 tbsp maple syrup

Directions

  1. 1Roughly chop Gala apples and place in blender with ice cubes.
  2. 2Add elderflower cordial, lime juice, maple syrup, and mint leaves.
  3. 3Blend on high until completely smooth and slushy, about 30 seconds.
  4. 4Taste and add more maple syrup if needed for sweetness.
  5. 5Pour slushy mixture evenly into four glasses, filling two-thirds full.
  6. 6Top each glass gently with chilled prosecco or sparkling grape juice.
  7. 7Stir once lightly to combine without losing too much fizz.
  8. 8Garnish each glass with a fresh mint sprig and serve immediately.

💡 For kids, swap prosecco entirely for sparkling white grape juice — still delicious and Hugo-inspired.
