Fruit Crepes

Ingredients

  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup whole milk
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 tablespoons butter, melted
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 2 cups mixed fresh berries
  • 1 tablespoon honey

Directions

  1. 1Combine flour, eggs, milk, water, salt, and melted butter in a blender and blend until smooth. Let batter rest for 30 minutes.
  2. 2Heat a non-stick skillet or crepe pan over medium-high heat and lightly butter it.
  3. 3Pour 1/4 cup batter into the center and immediately tilt the pan to spread thinly. Cook for about 1-2 minutes until the bottom is light golden, then flip and cook the other side for 30 seconds. Transfer to a plate and repeat.
  4. 4In a bowl, whip the heavy cream with powdered sugar until stiff peaks form.
  5. 5Warm the mixed berries gently in a saucepan with honey over low heat for 2-3 minutes.
  6. 6Lay a crepe flat, spread a dollop of whipped cream down the center, top with warm berries, and fold in half or roll.
  7. 7Arrange crepes on plates, drizzle with remaining berry sauce, and serve immediately.
