Fruit Crepes

Ingredients
- •1 cup all-purpose flour
- •2 eggs
- •1/2 cup whole milk
- •1/2 cup water
- •1/4 teaspoon salt
- •2 tablespoons butter, melted
- •1 cup heavy whipping cream
- •2 tablespoons powdered sugar
- •2 cups mixed fresh berries
- •1 tablespoon honey
Directions
- 1Combine flour, eggs, milk, water, salt, and melted butter in a blender and blend until smooth. Let batter rest for 30 minutes.
- 2Heat a non-stick skillet or crepe pan over medium-high heat and lightly butter it.
- 3Pour 1/4 cup batter into the center and immediately tilt the pan to spread thinly. Cook for about 1-2 minutes until the bottom is light golden, then flip and cook the other side for 30 seconds. Transfer to a plate and repeat.
- 4In a bowl, whip the heavy cream with powdered sugar until stiff peaks form.
- 5Warm the mixed berries gently in a saucepan with honey over low heat for 2-3 minutes.
- 6Lay a crepe flat, spread a dollop of whipped cream down the center, top with warm berries, and fold in half or roll.
- 7Arrange crepes on plates, drizzle with remaining berry sauce, and serve immediately.
