Fufu

A hearty West African dish of mashed plantains and cassava served with a rich, savory soup.

Ingredients

  • 2 lbs green plantains, peeled and cubed
  • 1 lb cassava root, peeled and cubed
  • 4 cups chicken or vegetable broth
  • 1 lb boneless chicken thighs, cubed
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 can (14 oz) diced tomatoes
  • 2 cups spinach or collard greens, chopped
  • 2 tbsp palm oil or vegetable oil
  • 1 tsp salt
  • ½ tsp black pepper

Directions

  1. 1Boil the plantains and cassava cubes in salted water for 15-20 minutes until very tender, then drain.
  2. 2Mash the cooked plantains and cassava together until smooth and fluffy, adding reserved cooking water as needed for consistency.
  3. 3Heat palm oil in a large pot and sauté the onion and garlic until fragrant, about 2 minutes.
  4. 4Add the chicken cubes and brown them on all sides, approximately 5 minutes.
  5. 5Stir in tomato paste, diced tomatoes, and broth, then simmer for 10 minutes.
  6. 6Add the chopped greens and season with salt and pepper, cooking for another 5 minutes until wilted.
  7. 7Serve the mashed fufu on plates and ladle the soup and meat mixture over the top.
