Ingredients
- •1 lb lotus stem, cut into bite-size lengths
- •12 oz raw shrimp, peeled
- •1 carrot, julienned
- •1 cup fresh mint leaves
- •1 cup fresh cilantro
- •1/2 cup roasted peanuts, chopped
- •3 tbsp gluten-free fish sauce
- •3 tbsp fresh lime juice
- •1 tbsp granulated sugar
Directions
- 1Blanch the lotus stem for 1 minute, then chill and drain.
- 2Poach the shrimp for 2–3 minutes until opaque and cool completely.
- 3Combine lotus stem, shrimp, carrot, mint, and cilantro.
- 4Mix fish sauce, lime juice, and sugar.
- 5Toss the salad with the dressing.
- 6Finish with chopped peanuts and serve chilled.
