Ingredients

  • 1 lb lotus stem, cut into bite-size lengths
  • 12 oz raw shrimp, peeled
  • 1 carrot, julienned
  • 1 cup fresh mint leaves
  • 1 cup fresh cilantro
  • 1/2 cup roasted peanuts, chopped
  • 3 tbsp gluten-free fish sauce
  • 3 tbsp fresh lime juice
  • 1 tbsp granulated sugar

Directions

  1. 1Blanch the lotus stem for 1 minute, then chill and drain.
  2. 2Poach the shrimp for 2–3 minutes until opaque and cool completely.
  3. 3Combine lotus stem, shrimp, carrot, mint, and cilantro.
  4. 4Mix fish sauce, lime juice, and sugar.
  5. 5Toss the salad with the dressing.
  6. 6Finish with chopped peanuts and serve chilled.
