Gà Kho Gừng

Ingredients
- •1.5 lbs chicken thighs, cut into bite-sized pieces
- •3 tablespoons fish sauce
- •2 tablespoons sugar
- •4 cloves garlic, minced
- •3 tablespoons fresh ginger, julienned
- •2 medium onions, cut into chunks
- •2 tablespoons vegetable oil
- •1/2 cup water
- •2 dried red chilies
- •1 tablespoon soy sauce
- •2 scallions, chopped
Directions
- 1Heat oil in a large pot over medium-high heat, then add onions and cook until golden and caramelized, about 5 minutes.
- 2Add minced garlic and julienned ginger, stirring constantly for 1 minute until fragrant.
- 3Add chicken pieces and stir-fry for 3-4 minutes until lightly browned on the edges.
- 4Pour in fish sauce, soy sauce, sugar, dried chilies, and water, then stir well to combine.
- 5Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes until chicken is tender.
- 6Remove the lid, increase heat to medium, and cook for another 3-5 minutes until the sauce reduces and thickens slightly.
- 7Taste and adjust seasonings as needed, then garnish with chopped scallions and serve over steamed rice.
