Tender grilled chicken skewers with a rich, creamy peanut sauce that's sweet, spicy, and absolutely irresistible.

Ingredients

  • 1.5 lbs chicken breast, cut into thin strips
  • 3 tbsp soy sauce
  • 2 tbsp fish sauce
  • 2 tbsp coconut oil
  • 3 cloves garlic, minced
  • 2 tbsp curry powder
  • 1 cup creamy peanut butter
  • 1 can (13.5 oz) coconut milk
  • 2 tbsp lime juice
  • 2 tbsp brown sugar
  • 1 tsp red chili flakes
  • Wooden skewers soaked in water

Directions

  1. 1Soak wooden skewers in water for 30 minutes. In a bowl, combine soy sauce, fish sauce, coconut oil, minced garlic, and curry powder.
  2. 2Marinate chicken strips in the mixture for 15-20 minutes while preparing the peanut sauce.
  3. 3For the sauce, whisk together peanut butter, coconut milk, lime juice, brown sugar, and red chili flakes in a saucepan over medium-low heat until smooth and warm.
  4. 4Thread marinated chicken strips onto soaked skewers in a wavy pattern.
  5. 5Heat a grill pan or outdoor grill to medium-high heat and cook skewers for 6-8 minutes per side until cooked through and lightly charred.
  6. 6Serve grilled satay skewers hot with the warm peanut sauce on the side for dipping and garnish with fresh cilantro and sliced cucumber if desired.
