Gai Satay
Tender grilled chicken skewers with a rich, creamy peanut sauce that's sweet, spicy, and absolutely irresistible.

Ingredients
- •1.5 lbs chicken breast, cut into thin strips
- •3 tbsp soy sauce
- •2 tbsp fish sauce
- •2 tbsp coconut oil
- •3 cloves garlic, minced
- •2 tbsp curry powder
- •1 cup creamy peanut butter
- •1 can (13.5 oz) coconut milk
- •2 tbsp lime juice
- •2 tbsp brown sugar
- •1 tsp red chili flakes
- •Wooden skewers soaked in water
Directions
- 1Soak wooden skewers in water for 30 minutes. In a bowl, combine soy sauce, fish sauce, coconut oil, minced garlic, and curry powder.
- 2Marinate chicken strips in the mixture for 15-20 minutes while preparing the peanut sauce.
- 3For the sauce, whisk together peanut butter, coconut milk, lime juice, brown sugar, and red chili flakes in a saucepan over medium-low heat until smooth and warm.
- 4Thread marinated chicken strips onto soaked skewers in a wavy pattern.
- 5Heat a grill pan or outdoor grill to medium-high heat and cook skewers for 6-8 minutes per side until cooked through and lightly charred.
- 6Serve grilled satay skewers hot with the warm peanut sauce on the side for dipping and garnish with fresh cilantro and sliced cucumber if desired.
