Gambas al Ajillo

Ingredients

  • 1.5 lbs large shrimp, peeled and deveined
  • 6 cloves garlic, thinly sliced
  • 0.5 cup extra virgin olive oil
  • 0.5 tsp red pepper flakes
  • 0.25 cup dry white wine
  • 2 tbsp fresh parsley, chopped
  • 1 tsp sea salt
  • 0.5 tsp black pepper
  • 1 lemon, cut into wedges

Directions

  1. 1Heat olive oil in a large skillet over medium heat.
  2. 2Add sliced garlic and red pepper flakes, sauté for 1-2 minutes until fragrant.
  3. 3Increase heat to medium-high and add shrimp, cooking for 2-3 minutes per side until they begin to turn pink.
  4. 4Pour in white wine and season with salt and pepper, cooking for another 2 minutes.
  5. 5Remove from heat and sprinkle with fresh parsley.
  6. 6Serve immediately with lemon wedges and crusty bread to soak up the oil.
