Ingredients

  • 1 1/2 lb baby potatoes, halved if larger than 1 1/2 inches
  • 1 cup water
  • 3 tbsp soy sauce
  • 2 tbsp rice syrup or corn syrup
  • 1 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tsp toasted sesame oil
  • 1 tsp toasted sesame seeds
  • 1 green onion, thinly sliced

Directions

  1. 1Place the baby potatoes, water, soy sauce, rice syrup, brown sugar, and garlic in a wide skillet and bring to a boil.
  2. 2Reduce to a steady simmer, cover, and cook the potatoes for 12 minutes, shaking the pan once so they cook evenly.
  3. 3Uncover and simmer 8–10 minutes more, turning the potatoes occasionally, until tender and the liquid becomes a glossy glaze.
  4. 4Remove from heat and toss the potatoes with sesame oil, sesame seeds, and green onion before serving.

💡 Use waxy baby potatoes rather than floury russets; they hold their shape while the glaze reduces and coats them.
