Garlic Aioli

Ingredients
- •4 cloves garlic, minced
- •1 egg yolk, room temperature
- •3/4 cup extra virgin olive oil
- •1 tablespoon lemon juice
- •1/2 teaspoon Dijon mustard
- •1/4 teaspoon salt
- •pinch white pepper
Directions
- 1Combine minced garlic, egg yolk, mustard, lemon juice, salt, and pepper in a medium bowl.
- 2Whisk together until pale and slightly thickened, about 1 minute.
- 3Add olive oil one drop at a time while whisking constantly until the mixture begins to emulsify.
- 4Once emulsified, add the remaining oil in a thin stream while whisking continuously.
- 5Taste and adjust seasonings with additional salt, pepper, or lemon juice as desired.
- 6Transfer to a serving bowl and serve with bread, vegetables, or seafood.
