Garlic Butter Green Beans

- •1 lb fresh green beans, trimmed
- •2 tbsp unsalted butter
- •1 tbsp olive oil
- •4 garlic cloves, minced
- •1/2 tsp salt
- •1/4 tsp black pepper
- •1/4 tsp red pepper flakes
- •1 tbsp fresh lemon juice
- •1/2 tsp lemon zest
Directions
- 1Blanch green beans in a large pot of salted boiling water for 3 minutes, then drain and transfer immediately to a bowl of ice water to stop cooking.
- 2Drain and pat beans completely dry with a clean kitchen towel.
- 3Heat olive oil in a large skillet over medium-high heat until shimmering, then add beans in a single layer.
- 4Cook without stirring for 2 minutes to get some char, then toss and cook 1 minute more.
- 5Reduce heat to medium, push beans to the side, and melt butter in the centre of the pan.
- 6Add garlic, red pepper flakes, salt, and pepper to the butter; cook 30 seconds until fragrant, then toss everything together.
- 7Remove from heat, add lemon juice and zest, toss once more, and serve immediately.
💡 Skip the blanching step on a busy weeknight — just add 2 tbsp of water to the pan after adding the beans and cover for 3 minutes to steam-cook them before the garlic butter finish.
