Ingredients

  • 1 lb fresh green beans, trimmed
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 4 garlic cloves, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1 tbsp fresh lemon juice
  • 1/2 tsp lemon zest

Directions

  1. 1Blanch green beans in a large pot of salted boiling water for 3 minutes, then drain and transfer immediately to a bowl of ice water to stop cooking.
  2. 2Drain and pat beans completely dry with a clean kitchen towel.
  3. 3Heat olive oil in a large skillet over medium-high heat until shimmering, then add beans in a single layer.
  4. 4Cook without stirring for 2 minutes to get some char, then toss and cook 1 minute more.
  5. 5Reduce heat to medium, push beans to the side, and melt butter in the centre of the pan.
  6. 6Add garlic, red pepper flakes, salt, and pepper to the butter; cook 30 seconds until fragrant, then toss everything together.
  7. 7Remove from heat, add lemon juice and zest, toss once more, and serve immediately.

💡 Skip the blanching step on a busy weeknight — just add 2 tbsp of water to the pan after adding the beans and cover for 3 minutes to steam-cook them before the garlic butter finish.
