Garlic Green Bean and Pork Stir-Fry
Blistered green beans and savoury ground pork cooked in a garlicky, umami-rich sauce — a dead-simple dish that punches way above its weight. Inspired by the dry-fried green beans you find in Sichuan restaurants.

Ingredients
- •450 g green beans, trimmed and halved
- •300 g ground pork
- •5 cloves garlic, minced
- •1 tsp fresh ginger, grated
- •3 tbsp vegetable oil, divided
- •2 tbsp low-sodium soy sauce
- •1 tbsp oyster sauce
- •1 tsp chili garlic sauce
- •1 tsp sesame oil
- •½ tsp sugar
- •¼ tsp white pepper
- •4 cups cooked white rice, for serving
Directions
- 1Stir together soy sauce, oyster sauce, chili garlic sauce, sesame oil, sugar, and white pepper in a small bowl; set aside.
- 2Heat 2 tbsp oil in a wok over high heat until smoking; add green beans and cook, stirring occasionally, 4–5 minutes until deeply blistered and tender — they should have dark spots; transfer to a plate.
- 3Add remaining 1 tbsp oil; add ground pork and cook over high heat, breaking it up, 3–4 minutes until browned and crispy at the edges.
- 4Add garlic and ginger; stir-fry 1 minute until fragrant.
- 5Return green beans to the wok, pour in the sauce, and toss everything together over high heat for 1 minute until well coated.
- 6Serve immediately over steamed white rice.
💡 Chili garlic sauce (Huy Fong brand with the rooster label) is available in the Asian aisle of most grocery stores. Substitute ½ tsp red chili flakes plus ½ tsp white vinegar if needed. Don't skip blistering the green beans — the charred spots are the flavour.
