Garlic Parmesan Roasted Brussels Sprouts

Ingredients

  • 1.5 lb Brussels sprouts, trimmed and halved
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp fresh lemon juice

Directions

  1. 1Preheat oven to 425°F and line a large rimmed baking sheet with parchment paper.
  2. 2Toss halved Brussels sprouts with olive oil, garlic, salt, pepper, and red pepper flakes until evenly coated.
  3. 3Spread sprouts cut-side down in a single layer on the baking sheet, leaving space between each one.
  4. 4Roast for 20–25 minutes, flipping once halfway, until deeply golden and crispy on the edges.
  5. 5Remove from oven, drizzle with lemon juice, and immediately toss with Parmesan.
  6. 6Taste, adjust salt, and serve hot directly from the pan.

💡 Don't overcrowd the pan — if sprouts are piled on top of each other they'll steam instead of caramelize. Use two sheet pans if needed.
