Garlic Parmesan Roasted Brussels Sprouts
Crispy, caramelized Brussels sprouts tossed in garlic and olive oil, finished with a generous shower of Parmesan. The kind of side dish that converts even the most skeptical vegetable eaters.
⏱ 35 minServes 4American
Ingredients
- •1.5 lb Brussels sprouts, trimmed and halved
- •3 tbsp olive oil
- •4 garlic cloves, minced
- •3/4 tsp salt
- •1/2 tsp black pepper
- •1/4 tsp red pepper flakes
- •1/2 cup grated Parmesan cheese
- •1 tbsp fresh lemon juice
Directions
- 1Preheat oven to 425°F and line a large rimmed baking sheet with parchment paper.
- 2Toss halved Brussels sprouts with olive oil, garlic, salt, pepper, and red pepper flakes until evenly coated.
- 3Spread sprouts cut-side down in a single layer on the baking sheet, leaving space between each one.
- 4Roast for 20–25 minutes, flipping once halfway, until deeply golden and crispy on the edges.
- 5Remove from oven, drizzle with lemon juice, and immediately toss with Parmesan.
- 6Taste, adjust salt, and serve hot directly from the pan.
💡 Don't overcrowd the pan — if sprouts are piled on top of each other they'll steam instead of caramelize. Use two sheet pans if needed.
