General Tso's Chicken

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cubed
  • 1/2 cup cornstarch
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup sugar
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1-2 tsp red pepper flakes
  • 2 tbsp vegetable oil
  • 1/4 cup chicken broth
  • 2 tbsp cornstarch mixed with water
  • 2 green onions, chopped

Directions

  1. 1Toss chicken cubes with 1/2 cup cornstarch until well coated.
  2. 2Heat oil in a large pan or wok over medium-high heat and fry chicken until golden and cooked through, about 8-10 minutes. Remove and set aside.
  3. 3In the same pan, add garlic, ginger, and red pepper flakes, stirring for 30 seconds until fragrant.
  4. 4Pour in soy sauce, rice vinegar, sugar, and chicken broth. Bring to a simmer.
  5. 5Stir in the cornstarch slurry and cook until sauce thickens, about 2 minutes.
  6. 6Return chicken to the pan, toss to coat evenly with sauce, and cook for 2 more minutes.
  7. 7Garnish with green onions and serve over rice.
