Ghanaian Cabbage Stew

Ingredients

  • 1 small head cabbage, chopped
  • 3 tomatoes, diced
  • 1 medium yellow onion, sliced
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp vegetable oil
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 cup water

Directions

  1. 1Heat vegetable oil and cook onion, bell pepper, garlic, and ginger for 5 minutes.
  2. 2Add tomatoes, paprika, and salt and cook for 5 minutes.
  3. 3Add cabbage and toss until coated with the tomato mixture.
  4. 4Pour in water and cover the pot.
  5. 5Simmer for 10 minutes until the cabbage is tender but not mushy.
  6. 6Uncover and cook 2 minutes more if excess liquid remains.

💡 Cut the cabbage into large pieces so it keeps some structure after braising.
