Ghanaian Cabbage Stew
Ghanaian cabbage braised with tomato, onion, pepper, and warm spices into a soft savoury side.

Ingredients
- •1 small head cabbage, chopped
- •3 tomatoes, diced
- •1 medium yellow onion, sliced
- •1 red bell pepper, sliced
- •3 cloves garlic, minced
- •1 tbsp fresh ginger, grated
- •2 tbsp vegetable oil
- •1 tsp paprika
- •1 tsp salt
- •1/2 cup water
Directions
- 1Heat vegetable oil and cook onion, bell pepper, garlic, and ginger for 5 minutes.
- 2Add tomatoes, paprika, and salt and cook for 5 minutes.
- 3Add cabbage and toss until coated with the tomato mixture.
- 4Pour in water and cover the pot.
- 5Simmer for 10 minutes until the cabbage is tender but not mushy.
- 6Uncover and cook 2 minutes more if excess liquid remains.
💡 Cut the cabbage into large pieces so it keeps some structure after braising.
