Ghanaian Garden Egg Stew Side

West African garden egg simmered in a tomato-onion stew with chile and a little peanut for body.

Ingredients

  • 1 1/2 lb garden egg, quartered
  • 3 tomatoes, diced
  • 1 medium yellow onion, diced
  • 2 tbsp vegetable oil
  • 1 fresh chili, minced
  • 2 tbsp peanut butter
  • 1 cup water
  • 1 tsp salt

Directions

  1. 1Heat vegetable oil and cook onion for 5 minutes.
  2. 2Add tomatoes and chili and cook for 6 minutes.
  3. 3Stir in peanut butter, water, and salt.
  4. 4Add garden egg and cover the pot.
  5. 5Simmer for 12 minutes until the garden egg is tender.
  6. 6Uncover and simmer 2 minutes more if the sauce is loose.
