Ghanaian Poloo (Coconut Biscuits)

Short, crumbly coconut biscuits scented with nutmeg, baked until just golden at the edges.

Ingredients

  • 180 g all-purpose flour
  • 80 g shredded coconut
  • 70 g sugar
  • 90 g butter
  • 1/2 tsp nutmeg

Directions

  1. 1Rub the butter into the flour with your fingertips until it looks like coarse breadcrumbs.
  2. 2Stir in the shredded coconut, sugar and nutmeg.
  3. 3Bring it together with a spoonful or two of cold water, handling it as little as possible.
  4. 4Roll out about a centimetre thick and cut into rounds or squares.
  5. 5Bake at 180C for twenty minutes until pale gold at the edges and still soft in the middle.
  6. 6Cool fifteen minutes on the tray, where they firm up and turn short.

💡 Take them out while the centres still look underdone. Poloo set as they cool, and a browned middle bakes to a hard biscuit.
