Ingredients
- •180 g all-purpose flour
- •80 g shredded coconut
- •70 g sugar
- •90 g butter
- •1/2 tsp nutmeg
Directions
- 1Rub the butter into the flour with your fingertips until it looks like coarse breadcrumbs.
- 2Stir in the shredded coconut, sugar and nutmeg.
- 3Bring it together with a spoonful or two of cold water, handling it as little as possible.
- 4Roll out about a centimetre thick and cut into rounds or squares.
- 5Bake at 180C for twenty minutes until pale gold at the edges and still soft in the middle.
- 6Cool fifteen minutes on the tray, where they firm up and turn short.
💡 Take them out while the centres still look underdone. Poloo set as they cool, and a browned middle bakes to a hard biscuit.
