Ghanaian Shito-Spiced Roasted Plantain

Ripe plantain roasted until caramelized, then lightly glazed with savoury Ghanaian shito sauce.

Ingredients

  • 4 ripe plantains, peeled and sliced
  • 1 tbsp vegetable oil
  • 3 tbsp shito sauce
  • 1 tbsp fresh lime juice

Directions

  1. 1Heat the oven to 425°F (220°C).
  2. 2Toss the plantain slices with vegetable oil.
  3. 3Roast for 12 minutes, turning once.
  4. 4Brush lightly with shito sauce.
  5. 5Roast 4–5 minutes more until caramelized.
  6. 6Finish with lime juice and serve hot.

💡 Add shito near the end so its dried fish and spices do not scorch before the plantain browns.
