Ginger Chicken
Tender chicken cooked in a fragrant ginger-tomato sauce with aromatic spices, perfect served over rice.

Ingredients
- •800g chicken breast, cut into bite-sized pieces
- •3 tablespoons vegetable oil
- •1 medium onion, finely chopped
- •3 tablespoons fresh ginger, minced
- •4 cloves garlic, minced
- •2 green chilies, finely chopped
- •400g canned tomatoes
- •1 teaspoon cumin seeds
- •1 teaspoon ground coriander
- •½ teaspoon turmeric powder
- •½ cup yogurt
- •to taste salt and pepper
Directions
- 1Heat oil in a large pan and add cumin seeds. Once they crackle, add chopped onions and cook until golden brown.
- 2Add minced ginger, garlic, and green chilies. Stir well and cook for 2 minutes until fragrant.
- 3Add turmeric and coriander powder. Mix and cook for 30 seconds.
- 4Add chicken pieces and cook on high heat for 3-4 minutes, stirring occasionally until slightly browned.
- 5Pour in canned tomatoes with their juice. Stir well and simmer for 10 minutes until chicken is partially cooked.
- 6Add yogurt and mix thoroughly. Season with salt and pepper to taste.
- 7Reduce heat and simmer for 10-12 minutes until chicken is fully cooked and the sauce thickens slightly.
- 8Garnish with fresh cilantro if desired and serve hot with steamed rice or naan.
