Ingredients

  • 3/4 cup vegetable shortening
  • 1 cup granulated sugar
  • 1 large egg
  • 1/4 cup molasses
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 2 tablespoons granulated sugar for rolling

Directions

  1. 1Preheat oven to 350°F. In a large bowl, mix shortening and 1 cup sugar until creamy, then beat in egg and molasses.
  2. 2In another bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. 3Combine dry ingredients with wet ingredients until just mixed.
  4. 4Roll dough into 1-inch balls, coat with remaining sugar, and place 2 inches apart on baking sheets.
  5. 5Bake for 8-10 minutes until cookies are set but still soft in the center.
  6. 6Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
