Gnocchi alla Sorrentina
Pillowy potato gnocchi smothered in fresh tomato sauce, mozzarella, and basil, then baked until golden and bubbling.

Ingredients
- •1 lb potatoes
- •1 cup all-purpose flour
- •1 egg
- •1 can (28 oz) crushed tomatoes
- •3 cloves garlic, minced
- •8 oz fresh mozzarella, cubed
- •1/4 cup fresh basil, chopped
- •3 tablespoons olive oil
- •1/2 teaspoon salt
- •1/4 teaspoon black pepper
Directions
- 1Boil potatoes until tender, peel, and mash until smooth. Mix with flour, egg, and salt to form dough, then shape into small oval gnocchi.
- 2Boil gnocchi in salted water until they float plus 2 minutes, then drain and set aside.
- 3Heat olive oil in a pan, sauté garlic, add crushed tomatoes, salt, and pepper. Simmer for 10 minutes.
- 4Preheat oven to 375°F. Spread a thin layer of tomato sauce in a baking dish.
- 5Layer half the gnocchi, then sauce, mozzarella, and basil. Repeat with remaining gnocchi, sauce, and cheese.
- 6Bake for 20-25 minutes until the cheese is melted and the top is golden.
