Gnocchi alla Sorrentina

Pillowy potato gnocchi smothered in fresh tomato sauce, mozzarella, and basil, then baked until golden and bubbling.

Ingredients

  • 1 lb potatoes
  • 1 cup all-purpose flour
  • 1 egg
  • 1 can (28 oz) crushed tomatoes
  • 3 cloves garlic, minced
  • 8 oz fresh mozzarella, cubed
  • 1/4 cup fresh basil, chopped
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. 1Boil potatoes until tender, peel, and mash until smooth. Mix with flour, egg, and salt to form dough, then shape into small oval gnocchi.
  2. 2Boil gnocchi in salted water until they float plus 2 minutes, then drain and set aside.
  3. 3Heat olive oil in a pan, sauté garlic, add crushed tomatoes, salt, and pepper. Simmer for 10 minutes.
  4. 4Preheat oven to 375°F. Spread a thin layer of tomato sauce in a baking dish.
  5. 5Layer half the gnocchi, then sauce, mozzarella, and basil. Repeat with remaining gnocchi, sauce, and cheese.
  6. 6Bake for 20-25 minutes until the cheese is melted and the top is golden.
