Gnocchi Verdi

Tender spinach and potato dumplings bathed in rich butter and sage sauce with a shower of Parmesan cheese.

Ingredients

  • 500g fresh spinach
  • 500g potatoes
  • 100g all-purpose flour
  • 1 egg
  • 75g grated Parmesan cheese
  • 100g butter
  • 8-10 leaves fresh sage
  • 1 pinch nutmeg
  • to taste salt and black pepper

Directions

  1. 1Boil potatoes until tender (20 minutes), then peel and mash while still warm.
  2. 2Blanch spinach for 2 minutes, squeeze dry, and finely chop.
  3. 3Mix mashed potatoes, spinach, flour, egg, 50g Parmesan, nutmeg, salt, and pepper until a dough forms.
  4. 4Shape dough into small balls and press gently with a fork to create ridges.
  5. 5Bring salted water to boil and cook gnocchi until they float, then 1-2 minutes longer.
  6. 6In a separate pan, melt butter over medium heat and add sage leaves until fragrant (2-3 minutes).
  7. 7Drain gnocchi and toss gently with sage butter, then serve topped with remaining Parmesan and cracked pepper.
