Gnocchi Verdi
Tender spinach and potato dumplings bathed in rich butter and sage sauce with a shower of Parmesan cheese.

Ingredients
- •500g fresh spinach
- •500g potatoes
- •100g all-purpose flour
- •1 egg
- •75g grated Parmesan cheese
- •100g butter
- •8-10 leaves fresh sage
- •1 pinch nutmeg
- •to taste salt and black pepper
Directions
- 1Boil potatoes until tender (20 minutes), then peel and mash while still warm.
- 2Blanch spinach for 2 minutes, squeeze dry, and finely chop.
- 3Mix mashed potatoes, spinach, flour, egg, 50g Parmesan, nutmeg, salt, and pepper until a dough forms.
- 4Shape dough into small balls and press gently with a fork to create ridges.
- 5Bring salted water to boil and cook gnocchi until they float, then 1-2 minutes longer.
- 6In a separate pan, melt butter over medium heat and add sage leaves until fragrant (2-3 minutes).
- 7Drain gnocchi and toss gently with sage butter, then serve topped with remaining Parmesan and cracked pepper.
