Goat Cheese Bites

Ingredients

  • 12 phyllo dough sheets
  • 4 tablespoons butter, melted
  • 8 ounces goat cheese, softened
  • 2 tablespoons honey
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped walnuts

Directions

  1. 1Preheat oven to 375°F and lightly grease a muffin tin with cooking spray.
  2. 2Cut phyllo sheets into 3-inch squares, brush with melted butter, and press into muffin cups, creating cup shapes.
  3. 3Bake phyllo cups for 8-10 minutes until golden and crispy, then remove and cool slightly.
  4. 4In a small bowl, mix softened goat cheese with honey, thyme, salt, and pepper until well combined.
  5. 5Spoon goat cheese mixture into each cooled phyllo cup and top with chopped walnuts.
  6. 6Serve immediately at room temperature or warm slightly in the oven for 2-3 minutes before serving.
