Goat Curry
Tender goat meat simmered in a rich, aromatic blend of spices, coconut milk, and tomatoes.

Ingredients
- •2 lbs goat meat, cut into chunks
- •3 tbsp vegetable oil
- •2 onions, finely chopped
- •4 cloves garlic, minced
- •1 tbsp fresh ginger, minced
- •2 tbsp curry powder
- •1 tsp cumin
- •1 tsp coriander
- •1 can (14 oz) coconut milk
- •1 can (14 oz) diced tomatoes
- •2 potatoes, cubed
- •salt and pepper to taste seasoning
Directions
- 1Heat oil in a large pot over medium-high heat and brown the goat meat in batches; set aside.
- 2In the same pot, sauté onions until golden, then add garlic and ginger; cook for 1 minute.
- 3Stir in curry powder, cumin, and coriander; cook for 2 minutes until fragrant.
- 4Return the meat to the pot, add coconut milk and diced tomatoes; bring to a simmer.
- 5Add potatoes, reduce heat to low, cover, and simmer for 60 minutes until meat is tender.
- 6Season with salt and pepper to taste and serve hot with rice.
