Goat Curry

Tender goat meat simmered in a rich, aromatic blend of spices, coconut milk, and tomatoes.

Ingredients

  • 2 lbs goat meat, cut into chunks
  • 3 tbsp vegetable oil
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) diced tomatoes
  • 2 potatoes, cubed
  • salt and pepper to taste seasoning

Directions

  1. 1Heat oil in a large pot over medium-high heat and brown the goat meat in batches; set aside.
  2. 2In the same pot, sauté onions until golden, then add garlic and ginger; cook for 1 minute.
  3. 3Stir in curry powder, cumin, and coriander; cook for 2 minutes until fragrant.
  4. 4Return the meat to the pot, add coconut milk and diced tomatoes; bring to a simmer.
  5. 5Add potatoes, reduce heat to low, cover, and simmer for 60 minutes until meat is tender.
  6. 6Season with salt and pepper to taste and serve hot with rice.
